Rocky Road Fudge

Friend of mine brought this super delish dessert at the Halloween party, out of curiosity i asked her how she makes that. To my surprise it actually very easy knowing how good the sweet was .... So i would like to share this sweet journey into this unique rocky road ....







Ingredients


  • 50ml Baileys Irish Cream liqueur
  • 200g good-quality milk chocolate, roughly chopped
  • 20g unsalted butter
  • 1/3 cup (100g) sweetened condensed milk
  • 50g chopped unsalted pistachio kernels or any other peanuts ur choice
  • 75g roughly crushed shortbread biscuits
  • 200g mini marshmallows (or regular marshmallows, chopped)
  • 150g white chocolate, roughly chopped

Method


  1. Grease an 8cm x 20cm bar pan. Line with baking paper, leaving some overhanging. 
  2. Place Baileys, dark chocolate, butter and milk in a heatproof bowl over a pan of simmering water (don't let the bowl touch the water). Allow to melt, then stir gently until smooth. Remove from heat and cool slightly. Stir in nuts, biscuit, marshmallow and 100g white chocolate. Spread mixture into pan, then chill for 2-3 hours until firm.
  3. Melt remaining 50g white chocolate as before. Drizzle over fudge, leave for 3-4 minutes to set, then cut into squares. The fudge will keep in an airtight container in the fridge for up to 1 week.

Spicy Mango Salad

     This very easy and healthy salad is one of my favorite salad i could make with my eyes closed, this beautiful salad is filled with nothing than fresh ingredients. Its freshly delicious and its super easy especially for a busy moms like me rather than munchkins on those chips ....
     Alas here are the recipe : 
*  1 pc of mango(half ripe so its not to soft) 
*  2 pc of shallots(chopped into small pieces)
*  Salt  ( as needed )
*  2 teaspoon sugar
*  3 spoonful Fish sauce
*  Dried chili (i would put 4spoonful cos i love spicy)

How to make ??

Peeled mango and chop into a small pieces then put in a medium size bowl, then put the rest of them together whisk it until it blend nicely .... give a little try it might be to spicy but you can always give a little sugar ... Enjoy!! 

Well it taste better than it looks in the picture though :-) mind me as a busy mom .... 

The Little Princess


My 5years old little girl loooooove to pose, she would voluntarily posing for anybody anywhere .... It just such a blessed to followed her around with my pocket camera nor my gadget. Thus here are some of her pictures that i could captured .... :-p



This picture taken when we were walking down the hotel where we lived, she saw this beautiful statue and was forcing me to take her picture next to it 'but not to close mommy so i could see my legs on the picture too' !! Amazingly cute isn't it ??


And this .... how can i forget this when she tried really hard to look like her mom in the funniest version of me i might say,oh my mini me !!!



A little earlier when she was 3 ... those cheeks are still containing those baby fat and obviously still posing !! 


Aside from posing for a camera she also love music very much .... its the part of her and i could say its in her blood. But don't easily get tricked by what you see in this picture, she didn't really play that ukulele or her 'Little Guitar' (that what she name this instrument) then again its for the sake of posing eventhough she was really singing and tried hard to play this instrument ... haha

My Starbucks City Series Mugs stories

     One of my hobby that actually become a passion for the last 10 years !! It started when i was a flight attendant in one of the int'l airlines, whose practically giving me a chance to travelled the world without have to spend a fortune. And my love for an ice coffee in particular Starbucks frapucinno has brought me to the idea of collecting part of them which i finally  landed my choice to their city series MUG. Their Mugs as we know it, has a name of every city along with their remarkable landmark where you purchased them, cool isn't it ??

     And now ever since i got married and settling down in one place following my little lovely family, i haven't been able to continue my own legacy in order to pull through all the city collection in the world (kinda a lot don't you think) well but the story doesn't end up here ... Thanks to my amazing friends who be able to get them for me, whenever they came back from somewhere they strangely feel obliged to get them for me (no pressure just a simple constant message and e mail from me) :-)))

     By far i owned 35 mugs though ... a good number for those series of constant begging and kissing ass some friends and family member, and this is still going on putting a more thicker skin for another series !! Oh come on those mugs aren't more than $15, i guess its quite civilize for a simple souvenirs isn't it ?? 

     At the moment ... I'm aiming for Paris or any other city in France whom i believe Starbucks having it branch there,Spain like Barcelona- Madrid, Berlin - Hamburg - Cologne - Munich cities in Germany, or maybe some countries at Scandinavians ?? well lot to catch up though ... Wish me luck on my begging journey for the sake of collecting Starbucks Mugs City Series ...

*Baked Chicken & Pasta*

     Having to live in a quite big 4bedroom house without helper plus 5years old daughter, making me to think smart in term of cooking. Well as a mother / wife / cleaner / driver / i definitely have my hand full everyday, but i do love to cook for my daughter especially for our lunch together after she got back from school. And the food should be fast, healthy and surely deliciously eatable for both of us .... And baking the food is actually easier than stir fry or any other way of cooking though,that's why this dishes becoming me n my daughter favorite meals for lunch.

So here are the ingredients you will need :

* 2handfull of any pasta
* 200gr of boneless chicken breast
* Half cup of milk
* Half cup of water mixed with a pinch of beef stock
* Frozen mixed vegies (or when you have enough time,cut a fresh vegies into small pieces)
* Butter (as needed)
* Grated cheese ( as desire )
* Pinch of dried thyme leaf
* Pinch of dried rosemary leaf
* Salt ( as needed )
* Pepper ( as needed )

How to make :

Lay the pastas on the pirex bowl spread the mixed vegetable on top, pour the water and milk together. Cut the chicken into 2pieces then lay them on top of the pasta and the vegies, sprinkle thyme - rosemary - salt and pepper. Put the butter and cheese all over it, cover the pirex bowl with aluminium foil then bake it for 30 minutes. Enjoy your deliciously easy lunch ... Gutten Apetit !!

Balinese sense of direction

     Being brought up with the way of saying direction using egocentric coordinate ( right-left-straight-behind ) has become my mindset for doing / asking direction wherever i go. And things become quite interesting when i moved to Bali and find out that the peoples here are using cardinal direction like ( south-north-west-east ). From where i come i would say 'go straight from here till you see the first traffic light then turn right after 3blocks turn left ... here you would experienced 'go east till traffic light, go north after 3blocks go east again' *_* seriously ??? First time i got this answer, i think i could hear my own brain has literary jumped out of my head, was thinking i might get Punk but i didn't see Ashton anywhere *wishing*


     So i read this blog about the same problem by Daniel Mcguire .... it wrote 'an orientation system that considers the central mountain, Gunung Agung, to be “north” and the sea to be “south”. When a Balinese tells you to go north, he might be telling you to go “toward Agung Mountain”, even if it is situated to the south, east or west of where you are! 
Confused?? so am i .... no kidding !!


     Therefore after tons of confusion and mind juggling,i decided to get my self a map and the GPS, problem solved !! Well don't try to get a compass, i supposed it wont work the way the trekkers on the mountain does, its a completely different world here .... Not to mention most people here are amazingly lacking the sense of direction, so forget about those what so call 'Cardinal Direction' they probably don't know exactly whereabouts the place you asked them for, hilarious isn't it ??


     Anyway I'm gonna call this off now and i will bend my body towards west then move my feet up north .... get it ?? no ?? well me neither ... good luck i suppose ?? or shall i say ... Welcome to my paradise .....
